I can smell freedom!

Oh blogging, I've missed you! Don't worry 3 more days of school and I'll be done! I can't wait to have my life back!

I've been trying to cut back on my carb-intake but it's been difficult. Pictured is a 6oz piece of lean carne asada with asparagus and yellow squash. (I buy the meat pre-marinated from Trader Joe's and weigh it on a food scale.)

Last night's dinner included more Trader Joe love. 2 veggie samosas (in the freezer section. They are incredibly tasty for not being fried and low in calories/fat!) and skinless, boneless chicken breast in a jarred tikka masala sauce with yellow squash and 4 cups of spinach. I loved adding spinach to this! Spinach and curry are meant to be.

Tikka Masala is my favorite curry but is usually filled with cream. The jarred version at Trader Joe's has 5 grams of fat per serving which is the best I've found. The jar suggests watering it down but I don't. The cooked veggies add enough water.

Next time, I might try a veggie version of this with chickpeas, even more spinach and bell peppers. YUM!

Have you ever made curry? How do you get the smell out of your house??? Keep in mind, Andy and I live in a small apartment.

Also Trader Joe's carries garlic naan, vegetable biryani and boxed indian side dishes. The closest Indian food restaurant to us is 10-15 miles away so this is great when we have a craving and don't want to go out! Plus I have control over the fat in my food. Love that!

p.s. adding spinach to everything is my newest obsession.

I heart Trader Joe's masala simmer sauce! And so does my husband, who's Indian, so I take it that means it's pretty good. I also add spinach to it. I add spinach to everything.

As for the curry cooking smell, I don't think there's really anything you can do. My mother in law cooks with her windows and patio door open. We just sort of embrace it.

I just stumbled over here, and I'm super excited to see someone else who is as obsessed with TJ's as I am! I haven't tried the veggie samosas yet, but when I'm there next (likely within the next 3 hours?) I'll make sure to check it out. :)

I think time is the only way to get rid of the smell. Matt & I bought our house from a South Asian family & it took quite awhile to get the smell of curry out, luckily we like that smell.
We are trying to cut our meat servings down to 3 oz, its so hard

I hear ya girl, it is very hard to lower the carbs and up the protein. I was doing so well for a few weeks, but lately haven't been feeling it. I just <3 carbs too much!! Those samosas look great, I'll have to keep an eye out for those!!

I live in a smaller place than you...in a studio on-campus! Whenever I cook curry spices, my roommate starts opening all the windows and doors...haha...makes me kind of feel bad...but to me, it smells wonderful!
