Pumpkin Black Bean Chili

Student teaching and night classes leave me totally drained and exhausted. That being said, using my crockpot has been a huge help. I know you just dumped your crockpot, Mo but I LOVE mine. I might even have a bit of a crush.

I found This recipe for black bean and pumpkin chili and put my own spin on it.

001

Sauteed 5 jalapenos, 1 red onion, 1 yellow pepper and some roasted garlic.

002

Threw in a can of pumpkin.

003

Threw in some carrots.

005

Yeah my crockpot is kind of dirty...

006

But this chili was soooo good. I used organic ground beef instead of turkey but you might as well sub more black beans instead of meat.

007

It doesn't have a pumpkin-y taste but it's filling and delicious. It was so appreciated after a rough day! I will make this again and again.

I've made pumpkin chili twice now and both times loved it! I didn't think it tasted pumpkin-y either! My favorite chili recipe is Andrew's chili: http://homecookedem.wordpress.com/2009/10/04/chili-weather/

i do a pretty basic chili (tomatoes, peppers, meat, beans... ) but the two extra things i add and love are cinnamon (just a touch) and chocolate (again, not a ton). neither add their flavor really, they just give the whole thing better depth (and the chocolate helps to balance out the acidity and spice chili can have)

I have only had "Standard" meaty chili, never pumpkin! Seems like it's worth a try!

That sounds good and it's not something I would think to make. I bought a crock pot last year and haven't used it yet! Perhaps I need to whip it out for some chili!

yeah i find that canned pumpkin in savory dishes doesn't taste so pumpkin-y. but kabocha works great, and canned sweet potato tastes more pumpkin-esque for some reason.

that looks awesome! i must heartily reccomend trying a ground turkey or chicken chili with tomatillos, jalapenos, and cilantro...no tomatoes. it is white and it is divine!

Sounds delicious!

I have to admit that I'm a little like Mo in that I don't particularly care for my CrockPot. I will use it to make soups or chilis, but I have yet to really find a meat recipe I enjoy. Especially chicken. Glad to know I'm not the only crazy because everyone I know LOVES their slow cooker :)

I laughed so much when I read Mo's post about her crockpot.
Thanks for sharing the pumpkin chili recipe. Looks delish.
I just bought 6 cans of the exact same pumpkin at Vons because it's my favorite Fall ingredient.
Looking forward to seeing more of your crockpot creations.

And this: http://www.burpandslurp.com/2009/05/14/oiling-up-my-rusty-culinary-skills/

The 2nd is not a chili, but still very very easy and GOOD.

Yes, I'm totally pimping myself out here. ;-)

Stay sane, Amanda! But I won't lie; I'm a bit comforted to know that my professors are probably having a hard time as I am, too. ;-p
