How Amanda does salad.

I'm weird about apples. I admitted it yesterday. But I'm even weirder with lettuce. Seriously.

I love romaine and pretty much romaine lettuce only. Other leafy greens are too "leafy" for my taste. I have to mix the leafier greens with the crunchy romaine in order to enjoy it. (Read: spinach)

Or cover the salad in these. I love them but I'm sure crispy onions are terrible for me. (As is terrible kitchen photography but you don't see me stopping that!)

Last night I made a huge salad without the crunchy stuff. (No croutons, tortilla strips, crispy onions or candied pecans) And dare I say it? I enjoyed it.

The ingredients:

Goat cheese
one whole sliced avocado
cherry tomatoes
shredded carrots
red leaf & romaine lettuce

And roasted figs topped with honey.

Delicious.

For the dressing, I spritzed the salad with olive oil and drizzled on some pear balsamic vinegar. It was so good! (Andy prefers vinegarettes but I love ranch dressing. I'm terrible. I know.)

Do any of you have this weird aversion to salads? I found that adding it tons of toppings and crunch helps me a ton. But God help me if someone offers me a spinach salad. I can't deal.

How do you get your leafy greens in? Any suggestions to help me learn to love greens?

(Would you guys be interested in reading about my (Amanda's) weight loss? I keep going back and forth on sharing that with the blog. But if you are interested I'll start a weekly segment.)

I think I seriously just drooled when I saw those roasted figs with honey... omg. Can you please send me one of your salads? B/c yours look way better than mine!! ;)

I'd love to hear about your weight loss. I always find that an interesting topic.

Tamara-Figs are sooo good. I haven't had them any other way besides roasted with honey but I'm okay with that 'cause I love them this way!

Wow that salad looks delish!!!! I am very picky with my salad...like I HATE carrots in them lol...And I always notice that salads from restaurants are always WAY better than the ones that I make at home. Damn I never thought of adding those onions to salads...thanks for the tip! (or maybe, Damn you for bringing that to my attention haha)

i won't eat the middle of the lettuce. that spine-y part? hells no. so i am weird with lettuce too.
i think spinach is something wehre it's better the more you eat it-it gets less weird or something.
josh used to hate most cooked spinach but he loves it just barely sauted (so it's wilted, not mushy) with a ton of garlic, plus salt, pepper and a little olive oil. spinach cooks down so fast, you end up with this tiny little serving from half a pound, which always makes me feel like i'm being healthy

I love salad and I love lettuce. that salad looks great!! If you don't like leafy greens why don't you just make salads without the greens? I do that a ton! I like leafy greens but dont always have them on hand so just chop a bunch of veggies!

I love reading about weight loss :)

Have you tried bok choy? The fucking best. Sorry, I just curse when I get fucking excited.

Anyway. Romaine lettuce is one of my favorite leafy greens, too. So much better than spinach. Raw spinach just...meh. That's all I want to say about it.

You know I have no fear of the Hugh Jass salad. I'll put anything in it and eat it joyfully. Except goat cheese. It tastes how goats smell. Don't deny it.

I'm interested in the weight loss journey, not because you or I need to lose weight but because I want to be supportive to you in any way I can!!!

I'm one of those freaks who loves veggies and lettuce. I liked the other suggestions to just have a chopped veggie salad- tomatoes, cucumbers, red onion, olive oil and balsamic make a great salad.

I would love to read about your weight loss, especially if there are updates and it's always great to learn from others.

i think we may be opposites in lettuce tastes (i am not a huge fan of romaine but love the darker stuff) but i do find that what helps me love a salad is having something hot (like a piece of chicken or roasted veggies) makes me like it more. but since that wilts the salad, and you like crunch, you probably wouldn't like it!!!

im a ranch girl myself... and i too have a preference for romaine...and if im having spinach salad i need something hot on top to wilt it a litle. fresh spinach leaves a weird coating on my teeth...kinda gross.
but yeah... those figs? legendary

I have lately been making a taco salad with jalapeno Food Should Taste Good chips, spinach, hot salsa, fage total 0% (as my sour cream), boca burger crumble, tomatoes, cut up summer squash (plus other veggies).

dude. no shame in the ranch loving game! i LOVE ranch. one year, my sister gave me a year supply of ranch for my birthday. from this restaurant that has the best ranch. when i was younger (and could) i would eat it on literally everything. now, i make it with greek yogurt. still good, but not AS good.

love the figs! i need to hop on that wagon!

and YES i would love to see weight loss stuff.

Hi Amanda! Just found your blog and you two are so cute.

Have you tried butter lettuce? I used to only like romaine too and butter lettuce is my new thing. Just enough crisp and with a really good flavor (I think). Also, I haven't tried garlic gold yet, but I've been seeing it around the blogosphere and apparently it adds good low-cal "cruch." Check em out and good luck with your weight loss!
