I need more veggies

Being sick with a cold for over a week has proved to me that I need more nutrients in my life. In the form of veggies, fruits and whole grains. I'm trying to incorporate more into our meals. I've been eating a lot of crap. (Andy packs his lunch daily and does really good. Someday I'll get him to post about this. Andy isn't nearly as snacky as I am!)

I made whole-grain pasta with veggies. Instead of using a sauce, I added in a few dashes of balsamic vinegar, a spray of olive oil and some garlic.

I added 3 cups of spinach but it wilted down a down!!!

Fat-free feta made it even better.

Here's a photo of the "junk." These are so good. I will not be buying them again. PB and pretzels is such a trigger food for me.

It's also really easy to squeeze in lots of veggies with sandwiches at Whole Foods. Andy ordered roast beef with arugula, tomatos, onion and sun-dried tomato pesto.

And a small side of pasta salad, veggie pasta salad and cucumbers. A small side of it was only $1. Love it.

To show you my "junk" I also ordered a root beer. This root beer actually isn't junk at all but I prefer to eat not drink my calories. Virgils is a good choice for soda when I'm craving it though!

I ordered a turkey avocado sandwich on whole wheat bread. I asked for extra spinach and caramelized onions. I loved it.

Dinner tonight was stir-fried veggies, lean burgers with guacamole and a La Croix sparkling water.

I just bought a pre-sliced and diced veggie pack, threw in some sriracha, teriyaki sauce, red pepper flakes and cooked for 5 minutes in a skillet. The veggies stayed crispy and delicious.

I'm not a HUGE fan of this sparkling water but it hits the spot when I have a diet coke craving.

I want to thank Mari for showing me how to use ExerciseTV. I am kind of lame when it comes to TV...I only recently learned how to use the remote. I am not a TV person by nature. But Exercise TV...I LOVE IT! I am so excited to try out some new videos and workouts.

Do you use Exercise TV? Any suggestions on workouts for me? I'm trying to burn 800-1000 calories a day (I burn a lot. This is a 90 minute-2 hour workout for me. My HR stays between 150-180 but more on that later!) Anyway I can use all the help I can get!

I always feel like I need the green too when I'm sick. That's when my extra spinach green monsters bust out. :) Good for you for getting lots of the veggies. I too love them mixed up with hot sauce. Feel better soon!

Looks like you've been doing much better with the veggies than me lately!! Andrew doesn't snack like I do either. But unlike Andy, Andrew is kind of bad about packing his lunch. He goes through phases when he's good about it, but he needs to be better. I should probably help out a bit more, especially since I'm off for the summer. Need to put that on my to-do list!

I used Exercise TV and love it. You should try out Walking Cardio Shape Up with Chris Freytag. That's one of my favorites! It mixes walking intervals with strength intervals.

I love that seltzer! When I first started drinking seltzer I had to mix it with fruit juice to help take the edge off. Now I prefer it plain without juice but it took me a while I get there. I don't like pop but seltzer is a nice change from plain water.

Trying to get more greens & veggies in your diet is so tricky! I like to roast a bunch of veggies in olive oil & balsamic & then serve them over a bed of spinach.

I've never tried exercise TV before, but it would be a great alternative when the weather is dreadful.

I need more veggies too and need more calorie dense meals since I upped my workouts. Seems like I am starving all the time!

I have AT&T and we have free on demand, and Health & Fitness is one of the channels. It has probably 40 different workout routines - even Biggest Loser!

I did a 30 minute last chance work out with Jillian, and I was a sweaty mess by the end!

THat pasta salad from WF looks delicious. I love making my own, but nothing compares to store made pasta salad!

I like exercise TV a lot. I don't use it as much as I used to but it's great for rainy days or when you just want to squeeze in a quick workout. I also love it for strength training!! I don't have any recommendations because I haven't been on recently but I love all the biggest loser ones :)

I love La Croix! Stuff like that keeps me from drinking those nasty diet sodas. I've been "clean" (haha) for a month today!
