I am so over Mondays.

I own this really nice wooden salad bowl from Crate and Barrel but I always manage to grab this lazy plastic salad bowl for huge salads. I need to stop being lazy. (The wood salad bowl can't go in the dishwasher.)

In the salad; tomatos, candied pecans, carrots, romaine lettuce, dried berries, garlic croutons and fat-free feta cheese. Is it weird that I prefer fat-free feta to the regular kind? It's good!

I used this raspberry dressing with the salad last night and loved it! I am a sucker for sweet dressings. Or ranch dressing but I am swearing off of it.

To complement the salad, I made a hearty fiberful chili. This chili had 1 can black beans, 1 can pinto beans, 1 lb ground lean turkey and chili seasonings. I'll admit it wasn't my favorite. What do you add to your chili to kick it up a notch? Vegetarian chili recipes will be gladly accepted!!!

Anyways that was dinner last night and will be my lunch today. I am trying to waste less food. So although I am craving black bean quesadillas, I will suck it up and eat leftovers. Go me?

This morning, I had an appointment with a private investigator to get fingerprinted. (For a job I swear!) So I ate my Chobani greek yogurt while flat-ironing my horse hair.

Chobani pre-mixing. I read on the packaging that Chobani is best enjoyed by scooping the fruit from the bottom rather than stirring. I always was a rebel. I love Chobani for 3 reasons. 1. It has 14 grams of protein in a six ounce cup. 2. No gelatin. (Gelatin freaks me out!) 3. It tastes like blueberry heaven.

Post mixing! After I finished my yogurt, I went and got fingerprinted and headed to the doctor for a TB test. (The things they make you do in order to work with children! YIKES!)

I tend to avoid breakfast so a yogurt was perfect for me. I got hungry again around 10am and had a banana nut vitamuffin.

This baby was GOOD! I wasn't feeling vitamuffins at first but I have changed my tune. I love banana nut muffins.

anyway, I am off to do more paperwork and errands before running 2 miles with Andy when he gets off work. I am making myself a mix on itunes. Lady Gaga is definitely going to be the star of my workout. Let's pray that my slow body can complete 2 miles in 20-25 minutes.

things to make chili extra good:
one can of diced green chilies (they're in litte 4 oz cans in the hispanic foods section at the store usually)-adds in some spice, and flavor
lots of cumin
a little bit of chocolate (it adds a depth of flavor, it doesn't make your food taste like straight up dessert or anything)
a little bit of cinnamon (same as the chocolate, not going to make it taste like you baked cookies)

i'm actually in the middle of making chili for dinner right now!

I just discovered fat-free feta this past week and I LOVE it! I didn't use a ton of feta before, but yeah, I kinda prefer the fat-free kind too.

And mad-love for chobani and vitatops. Perfect for getting in protein & fiber.

Fat Free Feta is amazing! Makes a salad so much better.

I am lazy with my bowls as well. Convience is always easier for me.

Good luck with your run! I'm hoping for the same thing today at the gym. Not sure if I'm going to make it even 1 mile - it's been ages since I ran.

Good luck on your run! I don't go much faster than 11 minute miles! I say it's more important to try and finish than go fast (at least it makes me feel better)!

My fave chili is just ground turkey, can of pinto beans, chopped green pepper and onion and a can (not drained) petite diced tomatoes and chili seasonings (chili powder, garlic powder...). YUM.

I also LOVE LOVE LOVE Greek yogurt! DOUBLE YUM!

Your salad looks amazing! I love nuts/cheese combo! I would add sauteed onions, peppers and a few pieces of crumbled bacon - it adds so much flavor and is SO good!

I love TJ's salad dressings. I have yet to have a bad one. I just bought their soy ginger dressing and am in LOVE.

Here is my favorite chili recipe...although Paula Dean calls it taco soup http://www.foodnetwork.com/recipes/paula-deen/taco-soup-recipe/index.html
I use ground turkey instead of beef.
I used to be a preschool teacher and I remember the fingerprinting, tests and paperwork I had to fill out. I got a little paranoid that my fingerprints would get messed up and they would accuse me of some crime I didn't commit. LOL, too many cop shows for me.

My chili is usually a mess of whatever is on hand. I usually brown 1 lb lean beef with chili powder, corriander, cumin and pepper, then saute onions, carrots, celery, whatever else is in the fridge and throw it all in the crockpot with kidney beans, homemade pinto beans, a can of crushed tomatoes, 1/2C salsa and a more of the same seasonings. Let it cook all day and its sooo yummy to come home to!

mmm I might make it this week! Yum!

girl! look on my blog for a great turkey chili! you can make it vegetarian by omiting the turkey! it is SO good! I adapted the recipe from a few I have seen, its in my recipe section! the key is lots of chili seasoning and cayanne, also letting it SIT for about an hour (minimum) when its done because all teh flavors need to combine, ya know?

that salad looks so pretty even if its in your plastic bowl lol, I LIKE IT!!

love sweet dressings too!
