Chicken parmesan & vitabrownies

The other day, I saw Biz make some chicken parmesan which is one of my favorite ways to make chicken. Honestly, I don't love chicken so I'm always searching for new ways to jazz it up.

I had to buy myself a mallet for this! I pounded out the chicken but not quite thin enough. I breaded it in half panko/half italian seasoned bread crumbs. The panko is the best!

For easier eating, I sliced the breasts up and served with buffalo mozzarella and whole wheat spaghetti with a veggie marinara on top.

This was delicious! Andy and I only managed to eat one of the pieces of chicken so we had leftovers.

For veggies, we had romaine lettuce salads with parmesan, tomatoes, and buffalo mozzarella. We obviously needed more veggies in the house. We had to stop our CSA delivery for 2 weeks since we'll be out of town on the pick up days.

I was sent these vita brownies a long time ago from the folks at Vitalicious for free so I could sample and review. I must have forgotten about them and was excited when I pulled them out of the fridge.

I topped the plain tart froyo with sliced bananas, chocolate chips and put the warmed vita brownie underneath. It was delicious. Andy and I both really liked the brownies. They were more cake-like than fudgy but still very good. I think I'd prefer them with ice cream or fro-yo than on their own.

I have a few more vitamuffins to try out so I'm looking forward to that!

Disneyland was a ton of fun, I took tons of pictures that I plan on sharing with you soon.

a wine bottle makes a pretty good mallet in a pinch. just hold the neck and hit the meat with the bottom of it.
i swear, it works.
and then, since there's gross meat juice on the wine bottle you HAVE to drink it. so that you can recylce the bottle before meat juice bottom contaminates the kitchen.

Well Kalin probably has the best advice here, but I have always had a meat mallet- it has spikes on it and tenderizes the meat. I think it's an Eastern European thing.

Your chicken looks really good!

I have that same tart fro yo- it's my back-up fro yo for when I won't have access to my $10 serving at the shop :)

And yes, warmed vita-brownies w/ ice cream or frozen yogurt is quite the convenient, delicious treat!

Can you believe that I've never had a Vita-Muffin? They look so good but I'm not sure they are worth the potential gluten stomach ache. Any thoughts?

I never bought a mallet so I would just put plastic over the chicken and use my fist to pound it down. I am pretty strong considering my skinny arms. :)

I might have to pick up some vitabrownies for my hubby. He loves cookies and brownies but I'm trying to get him to start eating a little healthier!

I love the vitabrownies! I like them a lot better than the muffins. They seem more moist I guess. I haven't had one in forever though bec I'm too cheap to order them online.

I know I should try Vitatops or Vitamuffins but I always forget to pick them up at the store or order online. I think I would definitely dig them warm over ice cream-yum!

Chicken is hard to cook right. I'm always afraid to order it in restaurants because 80% of the time, it comes out dry. Your chicken parm looks perfect though!

Ha! I NEVER used a mallet in culinary school! We all used the backs of pots and pans! "Very professional"! I've never had those vita brownies, but I hear "vita" has a bake mix!

I just recently experimented with panko too and am in LOVE! It has the best texture! Yay for a fun new way to jazz up your chicken! :)
