Stress snacks!

Being stressed out has really made me a fun girl.

This snack helped. Cinnamon PB and Chocolate chips. YUM. The Chocolate flavor reminded me of a sweet tortilla chip with just a tiny hint of chocolately goodness. I love the combination of sweet and salty so I was pretty jazzed about dipping the chips in my cinnamon PB.

Oikos Greek Yogurt!

I made a quick stop at Whole Foods yesterday before driving over for my exit interview.

I was in the mood for a big snack so I picked up my favorite Clif bar. (I really love the Mojo bars but rarely see them!)

Finally found a blueberry Oikos!

I love fruit in my yogurt! Oikos has just the right amount. Honestly this yogurt is great on its own since it's thick and flavorful but....

I had to add some maple nut granola and whole almonds. YUM!

School is taking over my life!

I haven't had anytime to dedicate to the blog. I've been sitting at my laptop FOREVER working on an annotated bibliography and a research paper. Ugh! It's enough to make me want to rip my hair out. So over school! It's crazy to think that I have to go back for Grad School eventually. (I want to get my teaching credential.)

A strawberry-mango-banana smoothie. With Pom of course.

An amazing salad from Sharkey's. With plenty of veggies to fill me up.

Vanilla froyo with strawberries, dark chocolate chips, 2 caramel corn jelly beans and roasted almonds.

Today we went to Natural Cafe. Natural Cafe is one of the biggest perks of living where we live. It's a chain but it's limited to our area. I'd miss it terribly if we ever relocated.

I got a bowl of vegan tomato spinach red potato soup. The flavors were great! This soup tasted pretty light too.

The sandwich is called "The Local Favorite" and comes with red onions, avocados, tomatoes, sprouts (blech!) and lettuce. It is so fabulous. My little sister Sarah and I always order this. Avocados are my weakness and it seems to be a family curse. Guacamole never lasted long in my parent's house.

Andy got a Natural Caesar salad with their homemade croutons, avocado!!!, tomatoes, romaine, parmesan cheese and grilled chicken. I love this salad so I stole plenty of his croutons. They are soooo good!

My other little sister, Emily is lucky enough to work at Natural Cafe. I'm jealous of her because I bet she gets to eat some fantastic stuff.

Observation Day

I observed a couple high school classes today. This morning I left the house super early. I thought I'd have time to stop by Starbucks to grab a coffee or something but I was wrong. There was a terrible car accident on the freeway and traffic took FOREVER! I barely made it there on time.

After the observations were over, I stopped by Gelson's for a salad before going to class.

This salad was just like heaven. I used garbanzo beans, blue cheese, croutons, spinach, tons of zucchini, grape tomatoes, red onion, noodles, chicken and shredded carrots. There is lettuce tucked under there too, I promise. ;)
Honest Tea sent me this Moroccan Mint Green Tea to sample! I'm skeptical because I'm not a big fan of mint but I'll try it!

And Annie Chun's sent us these soup and noodles. I called dibs on Peanut Sesame so Andy will be taking the Udon soup bowl with him to lunch tomorrow.
I'm off to watch Grey's! It looks like a tearjerker for sure.

Gossip girl how I love thee!

I am watching Gossip Girl and loving every juicy minute. This show is ridiculous! But I am obsessed!!! lol.

I went to Whole Foods on my way home from school today. I bought some things for my first blogger giveaway! I just love to wander around Whole Foods and stare at all the expensive and delicious things they sell there!

I had a mini diet sprite, a small salad with dried apples and cranberries, white balsamic vinegar, croutons and cheese and the pasta!

For dessert I had a mug of ice cream.

and I topped it with blackberries and chocolate chips. YUM!!!

Speaking of protein

I decided to make myself eggs this morning. Which makes me think of when I was doing bootcamp. (Ahem a fitness boot camp.)

My friend Sam and I have a running joke about eggs. She's the one who introduced me to boot camp. She is still working out with the trainer and looks fantastic. Makes me think about how I should have stuck with it!

I ate 2 eggs with some seasoning and a sprinkle of low fat shredded cheese. I ate half the eggs with a slice of purple grain bread. It was pretty good. I'm hoping it will keep me full!

Do you like eggs? How do you cook them? I always have omelettes or scrambled. I'm not very creative!

This morning I had an orange cranberry gnu bar and some strawberries. yay for fiber in the morning! Always makes me feel full.

Lunch was also eaten in my car...horrible habit

I had a footlong veggie sub from subway with pickles, onions, tomatoes, cucumbers, feta cheese, avocado, honey mustard, lettuce, bell pepper, jalapenos and cilantro. amazing! I hate all of the meat at subway so getting a veggie sub was a good option for me.

Even though I'm a huge PB fan, I'm intrigued most by the Cinnamon Raisin bar, I've never tried Gnu before :)I'm constantly changing favorite bars, I've gone through a Clif, Luna, Larabar, Kashi and Pure Protein phases. Right now I'm trying to mix things up getting a little bit of variety in my bars. Most recently, I've had the Pure Protein Hot 'n Healthy and lots of mini-Larabars I got at a race recently.Thanks for the contest, linked you to my blog!

Graduation!

I graduate college in 3 weeks. I am 25, so it's been a long time coming. I was talking to some girls in my class today (who are also 25) and we joked about being on the "7 year plan." I joke about it but sometimes I get really stressed out thinking about how I could have a masters degree by now! UGH!

With the graduation coming up, I have a lot of homework. I spent way too many hours at my laptop yesterday. 7:30am-2pm and again after my class from 8pm-10pm. I felt like an insane person. And yet...here I am again blogging and writing a paper. I needed a break from my creative writing. I have no creativity left! Any of you writers out there? How do I cure my writer's block!?!?!?!

Anyway the wedding is coming so dang fast. 82 days!!! I weighed in today and it was NOT pretty. I stayed the same as last week. Bah!

I decided to eat around 1400-1600 calories today since I doubt I will find time to exercise.

Breakfast was a gnu bar and a chobani yogurt.

Lunch was yucky Subway! I do not like subway. ugh.

Dinner was whole wheat pasta with Trader Joe's Rustico sauce and veggies.

I measured 2 dry cups of pasta. This made about 3-4 servings.

Sauteed spinach, red bell pepper, garlic and zucchini with 1 tbsp olive oil.

Stirred in the pasta and rustico sauce.

And served with a small green salad. It was very yummy! I should buy some soy crumbles or lean ground turkey to mix in with pasta sauces for more protein but oh well. I still managed to get 66 grams in today.

I got in 1304 calories today and I feel pretty satisfied. I do want a bite of my chocolate chip banana bread but I think I will avoid.

It's soooo good! I highly recommend adding flax, mashed banana and chocolate chips to a basic banana bread recipe. Fantastic! You don't need a lot of oil or eggs. (really you don't need any! ground flax and water works as an egg substitute and mashed bananas work for the oil.)

But at 200 cals a slice...this banana bread is kind of intense. I'm not hungry and I'm not craving sweets so might as well do without! Plus I had a banana walnut gnu bar today.

Weekend in San Diego

Andy and I had a fabulous weekend in San Diego. Our eating wasn't the greatest though. No sir.

We started with lunch at Submarina. Our favorite place for sandwiches. We both wish we had one closer!

Mine had jalapeno bacon, turkey, avocado, tomato, onion, shredded lettuce and melted pepperjack cheese. omg amazing! The whole wheat bread that it comes on is the best part!

And shredded lettuce? Wonderful!

Andy got ham, turkey, mustard, tomato, pickles, onions, lettuce and bacon on wheat. He paired his sandwich with jalapeno chips while I stuck with cheddar sunchips.

We also went to a Padre's game. This was our first baseball game of the year!

For Easter brunch, we went to the Bali Hai with Andy's parents.

We had a very pretty view! I didn't take any pictures of the food since we were in a crowded place. I always feel awkward taking pictures!

Wine!

I just gotta say; I love wine! This is a picture of us playing xbox and drinking wine at our best friend's house. Fantastic!

I want to plan a day to taste wine and drink a lot. I know this is not "healthy" but I need to pick out a few wines for our wedding! Any suggestions?
