Where was I?

This morning was rainy, overcast and cold. Perfect weather if you ask me! I am a Californian who hates the heat and the sunshine. Call me a freak, it's all good. The overcast weather puts a smile on my face, it makes me think of pumpkin pie, foamy lattes and double-breasted peacoats from The Gap.

I drove to the school I observe at and cracked up when I saw all the 7th and 8th graders running around in the rain. Crazy kids.

Saturday night Andy, our friend Brett and I went to see Blink 182 at the Hollywood Palladium. Before the concert, we went to a little hole in the wall restaurant called Magnolia.

We ordered spinach-artichoke dip to split

With yummy pita chips.

I ordered an avocado blt with a side of sweet potato fries.

Andy ordered a steak sandwich and sweet potato fries

Brett got lobster ravioli. YUM

Monday

Monday night, I made eggplant parmesan the lazy way. I grabbed this box of eggplant cutlets from Trader Joe's.

Threw 'em in a baking dish.

Threw this sauce on 'em.

And I sliced up some scallions, garlic and tomato for extra flava! And shredded some fontina cheese and put it on top.

I made some mashed potatoes and put them on the side. Easy, lazy and delicious!

Tonight! (sorry to cram 3 days into one post.)

roasted pork loin, roasted carrots, red onions, sweet potato fries, zucchini and a creamy chimichurri sauce.

The chimichurri sauce was so easy and yummy! I used parsley, oregano, olive oil, red wine vinegar, fat free sour cream, cumin and red peppers. It was easy to toss into the food processor and place on the side of dinner.

I am amazed at how much better roasted carrots are than raw carrots. I am AMAZED!!!

and the roasted onions....dear lord.

I dipped my veggies in this sauce. BAM out of this world.

And dessert was some Harvest Moon. I needed it tonight!

ooh...i'm going to try your lazy eggplant parm...it looks good! i used to like rainy days when i lived in cali...but i hate them now in boston!

Rainy days are not that bad. People just complain about them too much but I like them too. Lazy egglplant parm sounds like my kind of cooking!

Sometimes lazy is the way to go, I like it ;-)

You'd love the weather here. It's raining like mad and we're hanging around 48 degrees all day, brrr...

owwwwwww I want a harvest moon so bad! I am hoping to pick one up at WFs this weekend (love buying single beers!). The concert looks like an absolute blast- I am so jealous. Blink rocks. Great pre-concert dinner. The spinach dip...drool ;) Enjoy your rainy weather. Its raining in SC too!

Where do you find the time to make such lovely meals during the week?

I SOO wanted to go to that concert! How was it?? Oh and those sweet potatoes fried have got me drooling at my desk... The ravioli looks pretty delicious too =D
