Beer Monday: San Diego Edition

To celebrate my beloved San Diego Padres choking away the playoffs, beer Monday is all about San Diego. I guess a lot of my posts thus far have been, but San Diego has some amazing breweries that need to be heard.

I am recently realized I am an ale man. Any and every type of ale I love. Seems like San Diego is an ale town. A match made in heaven.

We start with my all time favorite brewery ever times 10: Stone. We go there whenever we go to San Diego. It is amazing (PS, we went 2 weekends ago and have yet to post about it. Stay tuned!). The brew for today is the Stone 14th Anniversary Emperial IPA.

I sort of botched the pour, but this is a pretty amazing beer! I guess the best way to describe an Imperial IPA is an extra hoppy and extra alcoholic IPA. This beer has a pretty robust 8.9% Alcohol Content by Volume, which is pretty awesome. It is made in limited batched. You actually can't find it anymore. I bought a bottle right after it was released, about a month ago. Stone makes amazing IPAs. I am drinking this one as a write. I hope it makes sense. Additional, Amanda and I and a bunch of friends and family went to Disneyland over the weekend to celebrate Amanda's Birthday. More on that later. But at California Adventure they have a beer garden of sorts that sells Karl Strauss, another San Diego favorite. I went with the Red Trolley Ale.

Blog hog.

Yesterday, at a blogging meetup Andy said I "hogged the blog." LOL. I guess I'll have to let him post more. I love that he wants to!

I found my camera. The world is okay again. (The secret to finding lost items is to tweet about it.)

I made eggplant parmesan with the organic eggplant from our organic pickup. It was the best eggplant I ever had. This time I sweated the eggplant. I learned this tip from a blog and will be forever thankful. You just sprinkle salt on the sliced eggplant and let sweat for 15 minutes. The eggplant seriously looked like it was sweaty.

Another important thing I learned from blogging is how to replace high fat/high calorie ingredients with healthier ones. I wanted to make macaroni and cheese. I wanted it so bad.

Here's the recipe I used.

Since my body doesn't tolerate dairy as well as I would prefer I substituted the butter for Earth Balance.

I also used half half&half and half nonfat milk to lighten it up

And whole wheat macaroni. It was still pretty rich but less so.

For sanitys sake, I served it on a salad plate with loads of steamed broccoli and a salad.

YUM. We have leftovers for 12 people. I got too excited.

The next day we were off to a food blogger meetup. I love meeting with other food bloggers.

In attendance: Marlon,Kaitlin, Me and Andy, Monica (Her lovely husband Ben took all of our photos. He's a keeper!)and Mama Pea, Gigi, Lulu and Pea Daddy.

Everyone was so nice and easy to talk to. I always think that California is lacking bloggers but clearly I am incorrect. Also how cute do the girls look in their pink mouse ear hats?

I loved meeting everyone and hope we can all get together again at the Foodbuzz Festival!

After the meet up, we met up with our BFFs.

We caught them on "It's a small world." It really is a small world. After all. I love going to Disneyland for a few hours. I want to go again already!

Daniel's birthday and Disneyland

Daniel had a good birthday. My little sister Sarah and I took him to lunch at Red Robin. I got Dan a laptop desk since he is obsessed with The Sims. It's yellow because he is also all over Spongebob.

He also got a birthday sundae but made me take off the whipped cream and rainbow sprinkles. (Did I mention that the kid only eats vanilla ice cream?)

The next day we headed over to Disneyland with Andy's mom.

I immediately got a blueberry muffin because I was starving. It was DELICIOUS but oh so buttery. I couldn't finish it.

I took pictures of myself on the Winnie the Pooh ride. (I sing "Heffalumps and Woozels" the entire time. Anyone else?)

I ate a surprisingly good turkey sandwich. (With caramelized mushrooms & onions, honey mustard and cranberry sauce)

And a veggie pasta salad.

And forced Andy to take stupid photos.

Went on the ride with the ear-worm. (It was recently updated and it's air-conditioned.)

And we actually got to watch a parade while eating our dinner. It was really fun.

For dessert, we had berries in balsamic syrup, lemon-vanilla panna cotta and chocolate espresso tarts. It was delicious.

We ate at the Trattoria in California Adventure if anyone is wondering.

We got fast passes to see The World of Color!

My World of Color photos did not really turn out but it was an incredible show and totally worth the wait to see it. Andy, Josie and I were pleased.

Flashback Friday: Disneyland Edition

Andy and I are going to Disneyland with his mom today! It was decided that a flashback friday was needed.

Disneyland means a lot to me and Andy. When we were dating long distance, we used to meet up at Disneyland (it's centrally located to where we both lived) and enjoy the day.

Disney's Food and Wine Festival

Wow! I love going to Disneyland and California Adventure but I love it ten times more during the Food & Wine Festival!

We started the day off right with a ham, egg and cheese crossiant.

Here we are with our best friends Tiffany and Gary.

After breakfast, we went to see Captain EO. I'm not going to lie it kind of freaked me out. The 80's were a weird time.

A few hours later, we met up with more best friends to attend the festival.

We started off with small bites. These plates were priced from $2-$5 and were cute and tiny. I got a White Cheddar & Beer soup. TDF!

And an assortment of cheddar cheeses with raisins. I hate raisins so I pawned them off and split some cheese with my friends.

Andy ordered a beef slider.

After our snack, we were on to the wine! They had $10 wine samplings. You got 4 half-pours. We tried wines from California first.

I'm no wine snob, I drank them all!

A few hours later I got another White Cheddar soup. It was that good.

And Adina got a profiterole. I sampled the cream filling. Superb.

We attended another wine tasting. This one was only $1!

A chardonnay, pinot noir and a zinfandel.

Gary, Tiffany and I just cracked up the entire time. We are very mature.

Brett, Adina, Andy and Gary attended a beer walk while Tiffany and I scouted out more wine. Tiffany and I were a little tipsy at this point...
