Easiest Caprese Salad Ever

I love the way heirloom tomatoes look. There is just something about the discoloration and the odd shape that drives me wild. So when I found these mini heirloom tomatoes at Trader Joe's, I jumped on them.

I immediately had plans to create an easy caprese salad with the beautiful babies.

I'm not a big fan of "moist" mozzarella. It actually grosses me out quite a bit, so I stuck with this marinated mozzarella.

and grabbed some basil.

mmm low moisture mozzarella. reminds me of string cheese.

and so easy. I just cut everything up and added a splash of olive oil and several splashes of balsamic vinegar. It was superb. I love all of those flavors together.

On the side of my salad, I made pastrami sandwiches.

This homemade bread from the Farmer's Market was definitely a show-stopper. I need to buy a bread maker, stat.


ugh so my knee is still killing me. I stand at work all day and it was just not good. I definitely can't run with it like this. I'm taking the day off working out which bums me out but I really don't want to injure myself further. I plan on icing my knee for a while and then running tomorrow as long as I feel better.

What do you do when an injury gets in the way? I feel like a big baby and I kind of want to try just pushing through the pain but I know that's not a good choice!

I love caprese salad for its simplicity and great blend of flavors. Good idea! Usually I just keep my leg elevated and try and stay off it as much as possible. It took me to 2 weeks to recover b/c as a teacher I was constantly standing and not giving it enough rest. Best of luck!

ice for ten minutes on and ten minutes off. That's what my coach had us do back in the day, anyway.

Maybe you should think about seeing a chiropractor? You might be due for an alignment. Also, make sure you really get your stretching in. It's very important.

Do you have the option for an easier workout - like swimming or biking? I think those are supposed to be easier on your joints, but still a workout!
