Stuffed Bell Peppers

Awhile ago I was sent this rice from Annie Chun's to test out.

I'm not a huge rice fan so it sat on the shelf waiting for me to feel inspired. I thought about making a stir-fry with it but stuffed bell peppers sounded so much better!

I picked orange bell peppers for Halloween.

I stuffed my bell peppers with; lean ground beef, Annie Chun's multigrain rice, chopped zucchini, parsley, tomato sauce, chopped jalapeno, scallions, garlic and hot sauce. Then I put them in the oven at 400 for 40 minutes. I had to watch the oven.

Next time I'll try using quinoa instead of rice. I've heard good things!

I'm way behind in blogging. AGAIN! Expect more from me soon!

P.S. I attempted to run 2 miles after work and really hurt my knee. I'm icing it right now and hoping that it will feel better tomorrow because I need to continue running! I hated running today. I felt like hell. Blah. Andy joined me at the gym and watched the Charger game while going on the elliptical. It's nice to have a gym buddy!

Also, while I was on the treadmill I accidently hit the emergency stop button. I was sprinting at 5.6 (I know, I know I'm slow!) and I almost fell off the treadmill. Then my knee started hurting and my left leg felt super tight. What the heck?

I love the baked bell pepper looks like a cute little flower! :)

And I HATE when you accidentally hit the emergency stop on the treadmill. Esp. if it's a machine that erases your stats after that too. UGH.

P.S. Saw your comment...haha I like kabocha but am not a huge fan of kombucha either. ;)

We must have been sharing a brain last night because I made stuffed pepper last night also.
I've hit the emergency stop button before - it sucks when you're in the groove. And don't think 5.6 mph is slow because that's about where I am too.

I'm a huge fan of anything stuffed..hehe..so these peppers look 'ta die for' yummyyy...i've been stuffing everything from zucchini to eggplant to sweet potatoes lately..it must be this autumn harvest air..hehe...have a great day.

I need to make a stuffed pepper very soon! Maybe I can stuff it with left over meatloaf? Hmmmmm
