Yogurt bowls and Kindergarten

That's right! I subbed in a kindergarten class today! Subbing 4th grade was rough for me as you know and I really stressed about working today. (They don't tell me what grade I'm subbing for until I show up.)

So when they told me kindergarten this morning, I beamed! I love working with my "friends. It's funny. I've noticed that elementary school teachers refer to their students as "friends." It cracks me up!

At 7 this morning, I made myself breakfast to fuel for the day.

I was going to just have blueberries but decided I needed something with staying power! (I'm not a big breakfast person. I'm rarely hungry before 10am.)

I hate vanilla greek yogurt usually but Trader Joe's makes the best vanilla greek yogurt. The vanilla flavor is so good, better than ice cream!

with a sliced kiwi and 1 tbsp of mini chocolate chips. I love adding some chocolate to my yogurt bowls. The mini chips are great because I get a little chocolate in every bite. It feels like I'm eating a decadent dessert but I'm not.

Honestly, this has been weighing heavily on my mind. I still eat way too much "junk." I go out to eat more often than I'd like and I often make bad choices. Yesterday I ate crackers and peanut butter instead of a "real" dinner because it was the healthiest looking thing in the school cafeteria. I only have 15 minutes for dinner between my 4-6:45 class and my 7pm-10pm class and I have to make it quick!

I need to find something that I can eat between classes that won't make me feel like crap. I'm going to try to work on it next week and plan accordingly. It takes me a while to adjust to a new schedule. Just like a kindergartener, I guess.

Tomorrow is Friday!!! I have my 3rd day of Week Two C-2-5k planned, a movie date and then a camping trip by the beach planned. It's going to be a great weekend!

Wow. Just wow

Before heading out to my sub job yesterday, I made myself a cereal bowl.

With a whole banana because I enjoy partying with potassium.

And the last of our new favorite cereal, Nature's Path Crunchy Maple Sunrise. Thanks for sending it to us to sample Nature's Path! Andy and I will definitely be restocking this after we eat down the pantry a bit.

So the sub job...I got kissed, hugged, sneezed on and licked by eight different students. I'd be lying if I said I wasn't surprised. I didn't realize kissing was such a thing! But the kids were sweet and the other teachers and aides in the class made the day easier for me. My shift was super short which was a nice way to start a job.

I grabbed lunch at Starbucks with Sam. I got a huevos rancheros wrap which was surprisingly delicious and had decent nutritional stats.

And a non-fat cappucino. Which I drank after 10am, the Italians would totally laugh at me for doing this.

After Sam and I parted ways, I headed to the grocery store to try something completely new to me. I wanted to make shredded beef in the crockpot but had no idea how.

Thank God for google. I came across Kat's blog and her recipe! I had the pleasure of meeting Kat at the foodbuzz festival and knew her recipe would be solid.

I used this maple bbq sauce that we got in our swagbags at Foodbuzz.

Poured some Dos Equis Amber over the top.

And proceeded to drink the remaining half despite it being 2pm.

Then I chopped up a head of napa cabbage for coleslaw. (Something else I have never made in my life.)

And put a scoop of both the shredded beef and the cabbage on a whole wheat bun. The meat was tender and easy to shred after about 5 hours on high for me. I think it depends on your crockpot. The coleslaw was a blend of reduced-fat mayo, dijon mustard, red wine vinegar and tapatio. I used less than most coleslaw recipes ask for because mayo is gross.

This sandwich was great. Full of flavor without being overloaded with fat and calories.

I ate mine with mashed potatoes but I bet baked beans would be even better!

What is your favorite crockpot recipe? This was easily a favorite for me. We have tons of leftovers!

Arms and Abs Day

So last night, I decided to work against my knees. I got on the treadmill and just walked for 25 minutes at an incline. I figured it would be safe for my knee and still burn some major calories at the same time. Eventually walking got boring so I ran a little bit too. Then I did 15 minutes on the elliptical, stretched and called it a day.

My knee hurt so bad it kept me up all night. So I'm going to make a doctor's appointment. I'm pretty sure the doctor is going to say that I need to rest and lose weight because my knees can't handle the pressure of running with all that extra weight. Blah...

So I declare today, "Arms and Abs Day." I figure I can work out my flabby arms and my gut without bothering my WITCH of a knee cap. We'll see.

And made a big egg scramble using 3 eggs. (This served both me and Andy.)

And made breakfast for dinner burritos. I just added sour cream and salsa to the egg scramble and refried beans. It was so good! And filling.

and I added half of a crumbled up burger for the other night for protein. I'm gonna need it after today. I plan on pumping some serious iron after working today. What are you favorite arm or abs moves?

Andy and I split these while watching Dexter Season 3. The chocolate peanut butter was fab and totally worth the calories. But the red velvet tasted artificial and gross. Must be all the food dye or something.

As for now, I'm on my way out the door to sub for an elementary school. I'm only subbing a partial day and I have NO idea what grade, what to do or what to wear. I am semi-stressed.

Just don't make me watch that bloodborne pathogen video ever again. PLEASE
