Kauai Day 1: Livin' in Paradise

Hello! We're home from Kauai!

We started the trip off with beer and cocktails in the airport while waiting to leave. Our flight was a little late so it was a splendid idea. Time needed to be wasted.

Andy stuck with a beer while I drank a strawberry margarita. It helped make the flight go by a bit faster. We landed in Kauai almost an hour later than we planned on. We immediately went to bed in our condo and woke up to...

This view from our lanai (balcony)! I was so excited! Waking up to the sounds of the ocean is one thing but seeing how beautiful the ocean is another.

We were up at 6am electing not to adjust from California to Hawaii time. (it's a 3 hour difference. We preferred to get up super early and go to bed late.)

And the wild chickens that roam throughout the area. They are considered pests but I truly loved them!!!!

Next up was breakfast. I needed coffee something fierce.

Andy ordered eggs, portuguese sausage, toast and hash browns. Portuguese sausage is amazingly flavorful, greasy and spicy. 2 slices of it was plenty.

I ordered an egg wrap that came with passion fruit/papaya jelly on top. It was incredible paired with the savory eggs, portuguese sausage and veggies inside. I loved this breakfast. See, I'm one of those people who just can't do sweet, carby breakfasts. Pancakes won't do it for me. I'll just be hungry in an hour.

Leave it to us to go to a burger place for breakfast.

I have over 400 pictures to share! Believe me we're both excited to blog. Andy will be blogging as well. I plan on catching up on your blog posts also. I missed the blog world! :)

TGIF

I don't know why...but I am so stoked about today being Friday! I guess it's probably because I don't have any classes today. Going back to school is easier than I thought it would be though, I feel like I never left!

I found out that my Tuesday night class (from 7-8:40pm) is only for eight weeks! I thought it was sixteen weeks like the other classes I am taking. So relieved that it's not. Come March, I will have my tuesday nights free.

I fueled after my run yesterday with a big smoothie. I used my favorite flavor of Amazing Meal.

Some of this loveliness. I forgot how great almond milk is in a smoothie! And it's not as calorie dense as cow's milk. And no tummyaches!!! LOVE!

I added a frozen banana, six frozen strawberries, ground flax seed and a drop of raw honey to the mix.

And had a vitamuffin on the side. Have you tried the Fudgy Peanut Butter Chip vitamuffins yet? They are my favorite! The peanut butter chips get all melty and hot and YUM!

And this smoothie was HUGE without being loaded with calories and sugar which I loved. I do wish I had some protein powder at home. I'm making a grocery list today! You guys gave me some great suggestions yesterday so I'm excited.

Dinner was raw veggies with sabra hummus. You know I'm gonna be sad when it's all gone!

And my first Flat-Out wrap pizza. Topped with pesto, light cheddar cheese, asiago cheese, chicken pesto sausage (from TJ's) and chopped red bell pepper. And a pepper flower on top.

Flat-Out wraps crisp up so nicely for pizzas. I'm glad I ventured out of my comfort zone and used these. They are low in calories, full of fiber and tasty.

This morning, I stuck with an old favorite. Sometimes I just need PB & J. Especially when I'm craving junk food like today.

Flat-Out Wraps rock my world

I have a confession. I am the victim of what I like to call a "food rut". I have been eating the same lunch everyday for about a week now. I am addicted.

a deliciously tasty Flat-Out wrap (light italian flavor) with 2 slices of turkey breast, a slice of muenster cheese and a heaping spoonful of sabra pinenut hummus. Paired with a sweet honeycrisp apple and carrot sticks.

And to change things up a bit, I added a bowl of chicken tortilla soup. Added a dollap of sour cream and some hint of lime Tostitos.

All together now. I also dipped my carrots in salsa ranch. YUM!

I have a few posts to make so I'm gonna get started on that! Including dining at a new restaurant, running with my sister and husband, and a lovely sunday brunch. Life is good.
