Boiled Artichokes and Pork Chops with Caramelized Onions

Last night I tried a recipe from Cooking Light. I like to get ideas from recipes and then improvise a little. I rarely follow a recipe exactly! I find it more fun this way!

I split an artichoke in two and cut out the inedible parts. I googled "How to Cook an Artichoke" for help with this. A lot of websites and blogs offer step by step advice with pictures included. It's nice!

The artichoke is a little bit smaller than my hand! You can kind of see my engagement ring here! AW!!!

I sliced this beautiful red onion. I truly love onions and I know that makes me a weirdo/creep!

I took 4 1/4 inch thick pork chops, balsamic vinegar, brown sugar (just a teeny bit), olive oil and seasoning and sauteed them together.

We each ate 2 with a little fat-free feta sprinkled on top. It was great!

My next blog post is going to be 100% wedding related. A progress report if you will :)

Love the ring! I wear a ring on every finger, but I was still really surprised at how heavy my engagement ring was. It's so different from my little play rings.

I love onions too, haha, you are not a weirdo ;-) I got my package in the mail yesterday, thank you! I tried the cinnamon raisin gnu bar this morning and it was amazing. I will do some reviews of everything very soon. Good luck with the wedding stuff!

ooh, i picked up an artichoke for the first time this weekend and boiled it whole... wasn't completely thrilled, not sure why. think i'll stick to the already prepared hearts for now!
