More fun with food trucks!

Yesterday I worked all day at a middle school so my lunch was spent in my car. I feel a little awkward eating a banana in a car.

After work, Andy, Sarah (my little sister) and I headed to Glendale to eat!

Cupcakes were purchased. We split these among the three of us. Cookie Dough and Red Velvet.

Then we lined up at Cool Haus for some ice cream sandwiches.

Sarah got red velvet ice cream with oatmeal cookies.

Andy got dirty mint with snickerdoodle cookies. The dirty mint had pieces of mint leaf in it! I did not sample because I'm not a mint fan.

I got brown buttered & candied bacon ice cream with snickerdoodle cookies. It didn't taste like bacon at all. It was more like butter pecan.

The food trucks had the longest lines so we decided to leave and go to Granville Cafe. Sarah ordered an avocado bacon melt with tomato bisque.

I ordered macaroni & cheese with chicken and asparagus. Sarah and I split our orders so we could get a little of each.

Andy ordered a rib eye sandwich with sweet potato fries. It was delicious!

I'm bummed that the event didn't turn out as amazing as I thought it would but I'm glad we had some amazing food anyway. Andy and I saved our portions of the cupcakes and ate them today. Bomb.

I have good and bad news...

Good: Andy and I booked a trip for our one year anniversary! I'll announce the details soon!

Bad: I have plantar fasciitis and tendonitis! But am cleared to run. I bought some heel inserts today and they helped a little.

Enchiladas and the perfect smoothie ingredient

People. Go out and buy a bunch of bananas.

Peel them, break them in half and freeze them in individual baggies.

Take your second batch and hang them on your counter. Frozen bananas are for smoothies and fresh bananas are for mornings when you have to rush out the door.

This juice is funk on its own. But fantastic in a smoothie!

I added half a packet of Amazing Meal, 1 cup green plant, 1 frozen banana, 10 frozen strawberries, 1/4 cup pom juice and 5 peach slices. It was DELISH!

Next up, I made some homemade guacamole. I start by slicing up two avocados into chunks.

While I made the guac, Andy cooked up some chicken. We filled tortillas with green chiles, cilantro, black beans, red bell pepper, chicken and cumin.

Rolled them up and covered them in green enchilada sauce and shredded pepper jack. (I don't put cheese inside the enchiladas.)

I leave my guac fairly chunky with tomatoes, garlic salt, cumin, crushed red pepper, chili powder, cilantro and lime juice. Usually onions too but I forgot.

It was still tasty! I credit the cumin this time.

I cooked the enchiladas for 15 mins at 400 degrees.

I used high fiber multigrain tortillas and worried that they wouldn't taste as good as corn tortillas. They were delicious, I could barely tell the difference!

Margaritas are also necessary.

Andy and I have an exciting event to attend in a few! I can't wait to tell you about it. Food trucks are involved!

The Great Race of Agoura Hills- Deena Kastor 5k

Yesterday Andy and I ran our very first 5k! We decided to run the Deena Kastor 5k at The Great Race of Agoura Hills. The great race is compromised of 2 different half-marathons, a 10k, 5k, kids run and a fun run. (The kid's and the fun run are a mile each.) It was a beautiful day outside for a run. My only complaint would be the wind. It was pretty intense but typical for the area of California we live in.

We were both feeling a little nervous but excited.

I'm so thankful that Sarah was willing to get up early to cheer us on. Sarah will be running a 5k with us in April.

The wind knocked the big blue arch down. Fail.
017 At 8:50am, we took our spots in the middle of the group. About 1200 people ran in this particular race. It was CRAZY! 018 025 Pretty soon it was over and I met up with Andy, my sister and my dad. Andy finished in 33:01 and I was 37:23. We were both pretty excited. I was expecting Andy to do 35 mins and for myself to do 42 mins. (I'm insanely slow!) During the run a woman ran beside me and said, "Let's do this together! We can finish this last mile strong!" We paced each other and did the walk/run thing. I walked a lot more than I would have liked but it was totally worth it.

My dad finished his half-marathon in 1:58:27! And he looked fantastic afterwards. I am so jealous of him but excited to finally be running races! I've got to be honest I was hoping that the walk/run thing would save me any knee/heel pain but I'm hurting a ton. I was limping last night! I am planning to take a few days off running, seeing a doctor and then getting right back to training for my next 5k. I plan on finishing in under 35 minutes next time! I've got to thank Mari for all of her support during my 5k training. It's great to have someone to talk to about everything! I'm excited to start training myself on speedwork. I'm thrilled about a 12 min mile and not ashamed at all. I know I'm slow but I'm also 30 lbs heavier than I'd like to me, a new runner and relatively weak (I need some muscles, yo!) I can't wait to see myself improve and change over time. I'll let Andy take it from here and share his story. I'm so proud of him! (We ran together for 10 minutes until I decided to let him go his own pace.)


Andy:HI! The 5K was sort of amazing. Amanda didn't mention that running the 5K with us was a Polish Olympic athlete. I tried to stay up with him, but he pulled away at the end. He finished under 15 minutes...so maybe he pulled away from me at the start.

I was stoked with my time since really I have only been running for about 6 months. We are playing to run again in the end of April so I'm hoping for a sub 10 minute mile pace. I was at 10:39 on this, and I think I can do better.

However, things might change. I have some severe neck pain(not due to running, an old injury that I never got checked out which is coming to haunt me). I have an MRI on Monday. Doctor said surgery is a possibility so we shall see.

The expo at the end was pretty sweet. The good people at Dole (who sponsors the event) had banana, raisins, pineapple juice, and mandarins. Whole foods was there making crepes and pancakes. A local bagel place was giving away bagels. It was the 25th anniversary of the event, so everyone got a really sweet medal. Totally a fun day! I never thought I would like running, but I totally love it!

Next time Amanda and I will have to hold hands as we finish. Really piss everyone off. AMAZING.

It's almost here!

Andy and I are running our first 5k together tomorrow! More than that later.

On Tuesday, I worked at a preschool. I worked for 2 classes. The first from 8-11 and the next from 12-3. I was pretty excited about having an hour break so I went to Camille's for a wrap.

I got my favorite. Chicken caesar with avocados and light on the dressing. It's delicious.

Dinner has been a lot of leftovers and takeout but we did make some carne asada Wednesday night since one of my classes was cancelled. Carne asada, chipotle sweet potato fries and guac.

I always try to make sure my protein is smaller than the size of my hand.

Breakfast yesterday was fabulous. Vanilla greek yogurt, strawberries and my favorite cereal of all time. Nature's Path Crunchy Maple Sunrise. The maple flavor goes so well with vanilla!

Yesterday, my little sister Emily accompanied me to pick up my race packet and bib for the 5k. We picked up Andy's and my dad's as well. (My dad is running the half marathon.)

They had a little expo inside and were selling so much stuff! I wish I had time to look through it all.

I did snag a piece of Great Harvest's guiness & gouda bread though. I had no idea there was a Great Harvest near us!

After picking up the race packets and free stuff (!!) Emily and I went to lunch.

Emily ordered a green salad with balsamic dressing.

I ordered a bowl of corn chowder. It was really creamy and really delicious.

And half a grilled cheese with fries. The grilled cheese was overly cheese and I took more than half the cheese off. Gross. The fries were very "meh." So I ate a few and called it good.

Em's cheese pizza looked way better.

As for free stuff, we got hats & bags.

Sunscreen, protein powder, dried plums (prunes) and a mini clif bar.

Now I'm feeling pretty excited! I don't think my time will be record breaking or anything but I am excited to finish!

2 questions for you:

1. Is it easy to switch to wordpress? I've had it with blogger!
2. Should I switch to wordpress and get my own domain? I've been debating it for awhile.
