Potato & Kale Soup with Oikos Greek Yogurt

This afternoon, I had an idea. Why not try to recreate one of my favorite soups of all time?

I love Olive Garden's Zuppa Toscana but don't love waiting in line for hours to eat it. No thanks.

So I grabbed my ingredients and got started.

Potato & Kale soup recipe
5 potatos (I used yukon gold and I did not peel them.)
2 cups of chopped kale
1/2 cup non-fat milk
1 can chicken or veggie broth
1/4 cup Oikos plain non-fat greek yogurt
1/4 cup finely grated asiago cheese
salt & pepper to taste

Boil potatoes in water until ready to mash
drain potatoes add remaining ingredients
Mash ingredients together. (I purposely left the potatoes a little chunky)

*I really think this soup would taste fantastic with smoky, crumbled bacon on top. But alas, we did not have any.

heat for 15 minutes (just so the kale isn't so bitter tasting!)

Enjoy!

005

The addition of the Oikos plain greek yogurt made this soup creamy without adding tons of fat. Love that!

And made about 4 servings of soup.

And can I just say that I love the kale in this soup? It definitely adds a healthy dimension to this soup and no bitter flavor. YUM!

Do you have a favorite soup? What is it? My other favorite is sweet potato bisque from Ralph Brennan's Jazz Kitchen in Downtown Disney. Heaven in a bowl.

This looks so good. I love potato soup, but rarely ever eat it. My favorite is tomato, or butternut squash. I love that you put kale in this soup. It makes it unique! And of course the Greek yogurt, I always put Greek yogurt in my soup, it thickens it up and adds some good protein, so good!

my family LOVES making this stuff at home.
they put in sausage, and my vegetarian bro puts in fennel seeds to get the sausage-y flavor

I made kale chips yesterday, and I was amazed at how cooking the kale removed the bitterness from its taste.

So how does it compare to the OG soup? It's one of my favorites as well, but I think they add sausage to the mix. It sounds delicious!

I really need to get some kale in my life, I tried it once in a green smoothie and it was too bitter so I need to find another way to eat it. Glad your soup turned out good :)
