59 days!

59 days till our wedding! Holy moly! It's coming so fast!

I am incredibly excited but nervous about fitting into my wedding dress! I'm hoping that I can drop another 10 lbs in 59 days...we'll see.

For lunch today, I am going to eat leftover Polenta Bake!

011

I sliced a polenta roll up into very thin slices. I layered half the slices on the bottom of a casserole dish.

015

Sliced up some tomatoes and bell peppers. (I only buy organic bell peppers now. They are high on the list for pesticides when not organic. ew!)

016

I layered black beans, corn, hot sauce, salsa, cheese and ground turkey, Kind of like a lasagna.

017

005

And had it on a little kid plate to help keep my portion down. I topped it with FF sour cream. Bueno!!

006

I will repeat this breakfast today. And in my car again. I'm awful!

007

Look at how the bar is full of yum. PB chips and pretzels? AND honey roasted peanuts? I dreamt for a bar like this. That might make me nuts...

010

Also I'll have some Oikos with granola. The Oikos pictured is Vanilla with chocolate chips but I'm not going to have any chocolate today. BTW Vanilla Oikos is organic, thick and perfectly sweet. At 11 grams of sugar it's not too terrible either. Greek yogurt thumps regular yogurt any day. It has really grown on me!

Now it's time for me to scramble! I've got a to-do list a mile long and a final tonight after work!

I like Sundays

I'm enjoying today. Andy and I slept in and got breakfast from Noah's Bagels. We both got a Sun-Dried Tomato Bagel with Sun-Dried Tomato Cream Cheese. They were sooo good. The coffee was mediocre and slightly depressing. I love coffee. Right now I am loving Panera Bread's Hazelnut blend. Nothing could be better!

We checked out the outlet malls right when they opened at 10am. I got some new stuff from Banana Republic. It made my day. I need a clothing makeover so badly but CANNOT afford it! I love scouring the outlets for good deals!

001

So I am crazy for Clif Mojo Bars! They have pretzels in them! YUM!

002

I'm not as crazy for the dipped versions as the trail mix bars but they are pretty darn good.

005

I'm also loving Food Should Taste Good chips. We're almost out! :(

008

Weight Watcher's New Ice Cream flavors are great for someone like me who cannot portion control. The peanut butter one is my favorite!

011

And I love sweet potatoes with light butter and Mrs. Dash. Out of this world good.
I hate our dishes, can't wait to buy new stuff!!

And last but not least....

016

California Salad from The Melting Pot. With walnuts, raspberry vinegarette, gorgonzola cheese and baby lettuce. I wish I could eat this salad more often! I'm such a sucker for cheese. Any kind! Except for brie...not a fan.

That was sort of a mish-mosh of pictures from the last few days. I've been focusing most of my energy on finishing school and a tiny bit of energy on the wedding. I can't believe that our 4 year dating anniversary is in 2 weeks!!! Ah!

A sneak peek at our anniversary dinner plans...ha! We actually ate at this restaurant for our 3rd anniversary but loved it so much that we vowed to come back. I think it would be a lovely way to celebrate 4 years of dating. Napa Rose is located in Disney's Grand Californian Hotel. The menu changes with the seasons and they have an excellent wine list. I'm definitely not a wine snob but I can appreciate a restaurant that caters to them. I plan on sampling a few reds. Woohoo! Any red wine suggestions?
