When dinner is unphotogenic.

I took Kalin's advice and turned a bag of dried pinto beans into refried beans. I just got out the crockpot, soaked the beans in water overnight, turned on the crockpot in the am and mashed the beans once they had softened up. Then I added tons of cumin, chili powder, garlic salt and seasoned pepper.

But dude how unphotogenic are beans?

They were amazing tasting. I didn't add any extra fat (lard, bacon fat or butter) because 1. gross and 2. they didn't need it!

I topped my unphotogenic beans with some unphotogenic soy chorizo mixed with 2 scrambled eggs.

Go to Trader Joe's and buy some soy chorizo. The ingredient list is way less scary than actual chorizo.

Top your bean, chorizo, egg mixture with sour cream, tapatio and pepper plant and eat. It tastes 100 times better than it looks. Way to be deceiving unphotogenic meal!

Italian Blood Orange soda pairs especially well with beans. Don't ask me why.

I worked out twice yesterday. 45 mins with the Last Chance Workout video and a quick 20 min run/walk interval training on the treadmill. I never work out twice a day but I was in the mood yesterday. I won't be working out today since I have a doctor's appointment, a paper to write and classes from 4pm-10pm. Lame.

Free pastries and a delicious frittata

I love twitter. Because of my twitter, I was able to find out that starbucks was offering FREE pastries with a purchase of a coffee. Andy and I were still recovering from our honeymoon in Italy so we were awake around 5am. I figured a trip to starbucks would be perfect for two early birds.

Andy got a mocha and an orange cranberry scone.

I tried a blueberry scone and a nonfat caramel macchiato. Neither were THAT good. I am over sugar in my coffee. Give me a nonfat latte anyday!

All the pastries for breakfast at home and in Italy made me crave an "american breakfast." So I decided to make an italian inspired frittata at home.

Fontina, Asparagus and Tomato Frittata

I found a few recipes online and tweeked them a bit to make it my own.

It was the first time I made a frittata in a skillet.

I decided to pair it with italian blood orange soda.

Eggs are tricky because the differences between a perfectly cooked egg, overcooked egg and undercooked egg are merely seconds. I literally stared at the frittata until the eggs were firm and no longer runny at all.

The results were nothing short of amazing.

Don't you love my little kid plates? We actually have new dishes but are waiting to unpack them. We are moving the end of august.

I think I'm going to try breakfast for dinner more often!
