A banana split saved my life.

I had a rough day. I tend to be super emotional about change and starting new things and today was no exception.

Today I turned in my application for my teaching credential. I have been lugging around most of that paperwork for about a year! On Tuesday, I finally received the results of my fingerprinting so I could finally turn it in. (Why did my fingerprints take so long?!!?!)

After I handed in the application, I started to cry. Why? Because I am so relieved! I am finally on my way to becoming a teacher. I've dreamed about teaching since I was a kid.

Then the demons came. I started to worry about not having a job, not getting admitted into the teaching credential program and failing at life. The negativity was overwhelming. I hate when things are up in the air! (And job-searching is so depressing. There are NO jobs!)

Andy came home from a long day at work and we decided it was appropriate to make banana splits. Because you know, banana splits make everything better. They boast several health benefits such as; mental clarity, an elevated mood and delight.

Start with a banana. Split the banana in half. (I had a half and Andy had a half.)

Get some ice cream. I chose Neapolitan. We get Dreyer's Slow Churned because it's lower in calories, fat and sugar than "real" ice cream but still tastes just as delicious. Personally, I am used to banana splits with 3 flavors of ice cream but 3 separate scoops sounded like a heart attack to me. With Neapolitan, we get it all in one scoop!

I may have added in some of the chocolate covered strawberries from one of Andy's students.

And a light drizzle of caramel sauce.

I cut the chocolate covered strawberries in half. (I used 2 strawberries, 1 for each of us.) They didn't come out so pretty.

Added some light whipped cream and called it a day! Today wasn't the best, but tomorrow will be better!

Does ice cream ever cheer you up? I try not to improve my mood with food but ice cream almost always helps!
