Groceries!!!


Let me preface this by saying, I did not eat anything remotely healthy today! The above photo was a New York Cheesecake donut from Krispy Kreme. It was SO good. oh lord. Not 500 calories good though. Next time I hit up the Kreme (in a year or so) I will get something else.

We did some serious grocery shopping tonight. (We shopped like crazy all weekend actually. Oi) I was ready to buy some healthier food options since I ate so badly over the last two weeks. I gotta get serious about losing weight for the wedding.




I was excited to finally find Annie's Mac & Cheese in the individual packages. I've read rave reviews on other blogs. I'll be sure to give my input soon.

Also pictured: Gala apples, baby carrots, pama liquor, chardonnay I found at Bevmo, lentil rice biryani, fire roasted salsa and Oroweat Double Fiber bread. I've seen double protein on other blogs but I can't find it anywhere! :(





A closer look at the Chardonnay. According to other winos it's a bit too light and sort of lame. I wish I had read reviews before buying! Oh well I'll give it a shot.

Andy was super excited to get some beer for his birthday from our best friends. Of course, he opened it up as soon as we got home to inspect.

Finally feeling better :)


Lunch was Sharkey's. I love that this bowl is only 400-500 calories.


Sour cream, guacamole, zucchini, squash, grilled chicken, pico de gallo and bell peppers. Delish!



it came with 3 corn tortillas. so I made little tacos.

Later on I had a snack. This bar was ok. Not my favorite but whatever. (Yes that is P. Diddy and Dog the Bounty Hunter in my locker at work. My co-workers have a sense of humor!)


For dinner I made some scalloped potatoes. I sliced 4 yukon gold potatoes thin and topped them with Mrs. Dash, flour, low-fat butter, 2% cheese, nonfat milk and panko breadcrumbs. Only 150 calories per serving. This serves 6 people.
I didn't use a recipe so I had no idea what to expect.

It was pretty good. Not as creamy or fatty as I was used to but oh well. Healthier!
Dinner was shredded bbq chicken on a whole wheat kaiser roll, some stuffing (from a box) and some of the scalloped potatoes.




Also a glass of white wine. I love our Madonna Inn glasses.

Sick

Sorry for the lack of posts over the past few days. I've been sick with some mystery illness. One doctor told me I had a kidney infection and the other mentioned something with my intestines. I don't know what the heck is going on. All I know is, I'm in pain. My entire body aches. I feel a sharp, jabbing pain up near my ribs. Tomorrow I'm having an ultrasound to check my insides. Cross your fingers that nothing is seriously wrong!

Yesterday's doctor took my x-rays and did a blood test. He called me earlier and said, "Poor sick girl. You should get some help." That is all he said. What the heck?!??!!?

Anyway I will update you as soon as I start feeling like myself again!

It's November in So Cal


Dinner last night was so easy. We made pollo asado with onions and bell pepper, squash & zucchini with lemon juice & lemon pepper, and some chips with queso dip. I stole my recipe for queso dip from my friend Ashley. I just mixed some lowfat cream cheese with salsa verde and some shredded lowfat cheese. It turned out pretty good.


Dessert was an apple crisp with vanilla ice cream. I used 2 apples sliced thin, brown sugar, oats and a smidge of butter. It wasn't super crispy or heavy. I just baked the apples for 10 mins, dumped them in a bowl and plopped ice cream on top. Yum. I ate this while taking my online astronomy test.

It is hot and miserable outside. Yesterday on my lunch break, I walked to my car and immediately walked back in. It was 95! What is going on here people? It's November! I've just been in the mood for "wintery" food like soup, coffee and mashed potatoes. This weather feels differently though. Anyone else ready for some cold weather? I have so many cute sweaters, peacoats and scarves to bust out. I'm ready!

Engagement dinner and beyond


I made a salad with the few veggies left in the house. Today's salad was lettuce, squash, zucchini and feta cheese. I used low-fat greek dressing. It wasn't half bad!


And of course I fed my Starbucks addiction with a tall non-fat caramel macchiato.



Lunch today was a simple turkey sandwich with mustard and pepper jack cheese. Boring, I know but easy for me to pack in the wee small hours of the morning.


Engagement dinner

Andy and I split a pasta dish with pesto, cajun grilled chicken, tomatoes and cilantro.

Andy started with a caesar salad. I'm sad I didn't try it :(

My salad had goat cheese, pecans, tomatoes and a spring mix. I loved it!



We look awful and exhausted. ha.


We also had some wonderful sangrias. We split a whole pitcher! Woo!

Two boos who eat and get married!

We picked out our wedding venue today! And set the date!


So July 5th, 2009 we will get married. I'm thrilled.


Here are a few pictures of the venue. I love the archways, the plants and the waterfalls. It is absolutely stunning.




I want our wedding to be comfortable and fun. I have a big family (60/100 guests are related to me)and we rarely get together so it will be nice to have everyone together.

So yes, wedding planning has interrupted all of my food blogging. I'm back on track today. Finally!!

Drinking my calories


Lunch was on campus. I think I did better today than usual. I had a premade turkey sandwich on whole wheat bread and swiss cheese. It was huge! I had a hard time finishing it.



Plus a small side salad with romaine lettuce, cotija cheese, lowfat cilantro dressing and some tortilla chips. It was okay...not worth 150 calories. You can see my ring in this picture!!! :)


On the way to work from school I stopped by Whole Foods. What a disappointing shopping trip. All I wanted was a Pumpkin Spice Clif bar BUT NO. Instead I got talked into buying a shopping bag.


I tried this strawberry lemonade. It was too sweet for me. I think it'd be good watered down a bit.



Then a snack. I tried a chocolate chip peanut crunch clif bar. It was soooooooooo good. Almost made up for the missing pumpkin spice bar. Almost.



Dinner!!!!


I was thrilled to pour myself a glass of this dry apple cider! I got it at Trader Joe's and I'm hooked. If you have a Trader Joe's near you, try this!!!!


We have tons of zucchini left over so we chopped it up so I could make baked zucchini chips!



You just mix 1/4 cup nonfat milk with 1/4 cup egg-substitute and garlic. Dip the zucchini in the egg mixture and then dip it in a dry mixture of panko bread crumbs, italian bread crumbs and whatever seasoning you like. I used Mrs. Dash Lemon Pepper and Garlic Powder. YUM!


Andy made us burgers. We put them on whole wheat buns with pepper jack cheese, lettuce and tomatos. The burgers were made with extra lean beef so were only 140 calories, 4 grams of fat and 45 grams of protein! I never get enough protein. And I had some fat-free ranch and scalloped potatoes (which I didn't make)

Now it's time to watch Grey's, The Office and some recorded episodes of The Hills. I love Thursdays, it's time for us to relax.

Which day of the week is your favorite? Thursday is definitely mine. The weekend is pretty good too.

Breakfast with Chobani


I have class all morning so I need a breakfast with staying power so I don't snack on campus.
I had some Chobani Greek yogurt in my fridge so I decided to make a bowl of Blueberry/Banana Yogurt. I originally wanted to make a parfait but didn't have the right type of glass. Next time.


First I mixed the yogurt. Flavored Chobani tastes like thick yoplait to me. I love that it has 15 grams of protein. And look at all the fruit on the bottom!



Added in a banana that was on it's last legs and some Bear Naked Fit Vanilla Almond Crunch Granola. It only has 3g of sugar per serving! I love it.



Aw finished product. Now I can finish reviewing short stories for Creative writing. We'll see if this breakfast holds me over. I'm hoping it does.

November 12th Eats


First of all what the heck. My water bottle got stuck in the vending machine at school. What a waste! I spent like 10 minutes trying to get this out before I gave up. I was annoyed.


I had a peanut butter Z-Bar to help me cope. My favorite flavor.
I basically snacked all day. I had some tomato-basil crackers with laughing cow cheese. I love that one wedge is only 35 calories!
Lunch was a freckled banana, a PB and Boysenberry sandwich and some string cheese.
I tried this Clif Bar for the first time. 2 bars in one day is not advised my friends. But this one made it worth it. I have to buy more of their seasonal bars before the season ends. I love them!

Also random, but isn't my coffee cup cute??
I also had a fuji apple. It was awful.. No flavor at all :(
I'm telling it pays to buy organic.


Andy is watching Fight Club, which I've actually never seen! I want to see it from the beginning so I'm blogging to keep myself from watching! It's not really working. I'm so intrigued.
Do you have to watch movies from start to finish or are you okay with just watching bits and pieces?
